You are likely to meet camel drivers and guides at the port of Dahab. Just approach them and ask if they can give you a ride. Check in with the police before you leave, and do not pay the guide until you return. It is also very easy to find travel agencies in Dahab that can organise excursions, either by jeep or by camel.
